Cherry Vanilla Coke Cupcakes

I almost never make the time to cook anything (other than pasta). I actually love to cook whenever I do have the time and motivation, but my biggest issue is finding something I'll actually like. I'm a bit of a picky eater, so it makes it difficult. 

However! When I was given the challenge to make something involving Coca-Cola, I jumped at the opportunity. I immediately had the idea of making Cherry Vanilla Coke Cupcakes. They're easy to make (even easier if you buy the box mix!) and taste fantastic with the added Coke that I planned to use. Even more than that, my boyfriend is super obsessed with basketball, and NCAA® March Madness is a high priority on his list (even while he's in nursing school). So I figured cupcakes were a win-win. He gets me to watch basketball with him while munching on cupcakes and I get to bake/enjoy my cupcakes with him while watching basketball. Priorities. 

Thus, I set out to make my idea reality. I thought about making the cupcakes from scratch, but since I'm still in college (for a couple months at least!), I figured I'd use a box mix to encourage even the laziest of students to get up and bake these fantastic cupcakes. And here's how I made them.


Ingredients:

// White cake mix (any brand you love!)
// 1/2 cup of water
// 1/3 cup of vegetable oil
// 3 egg whites
// 1/2 can of Vanilla Coke
// 1/2 can of Cherry Coke

Set your oven to 375 degrees and let it preheat while you mix everything together. Using a mixer, beat the mix on low for 30 seconds and then on medium for 2 minutes. It might still be a bit lumpy, but that's okay! Fill the cupcake tins until they're 3/4 full (I only did half...so I have mini cupcakes!), then bake anywhere from 15 - 19 minutes. I did mine for 16 and they were delicious.
Take them out, let them cool, then use whatever icing you love! I almost got Funfetti, but ended up sticking with cream cheese to complement the cherry and vanilla taste. Once you're done, throw on some sprinkles or sugar crystals and you've got the easiest, most delicious cupcakes ever. Drink it with a Vanilla Coke and you've got my perfect dessert! ;)

I actually had to ask someone where they were because instead of being near the drinks, they were in the very front of the store! They're 3 for $5 in most places, so grab them quick! They had just finished stocking this when I found it.
